Chandra Hara and Chandra Kala Recipe

Ingredients:
For the Dough:
- 4 cups maida flour
- A pinch of baking soda
- 1 cup ghee (or dalda or vegetable shortening)
- 1 cup water
- Oil for deep frying
For the Filling:
- Kova
For the Sugar Syrup:
- 2 cups sugar
- ½ cup water
- 2 pinches of saffron
For the Masala Milk:
- ½ liter of half and half
- 1 tbsp almonds
- 1 tbsp cashew nuts
- 1 cup sugar
- 1 tsp cardamom powder
- ½ tsp of saffron
Method:
1. In a large bowl, combine maida flour, melted ghee, soda, and water to form a soft dough. Once mixed well, cover the dough with a wet cloth and set it aside for 5-10 minutes.
2. Roll out small balls from the dough and flatten them into puris. Place some kova in the center of each puri, then fold the edges to form a triangle shape. Insert a clove in the middle to seal the kova inside.
3. For the sugar syrup, mix sugar, water, and saffron, ensuring it reaches the right consistency.
4. Deep fry the triangle puris until they turn golden brown. Immerse them into the sugar syrup for 1-2 minutes, ensuring they soak well. Remove and place them on a plate to cool.
5. To serve, place one of the sweets in a bowl, pour masala milk over it, and enjoy this decadent treat!
